Dogs learn about other dogs through the scent they leave. Similar to when people talk to other people, dogs convey messages through scents. A dog that smells another dogs urine, can learn if that dog is male or female, if they are in heat, what the dog's temperament is, if they are healthy or sick, etc.

Not all horses willl freak out at the smell of blood. I had a mare that would stand at the fence and watch a neighbor butcher hogs. I have another mare that does go a little nuts if she smells blood. So it really is an individual thing.

Corndogs smell for the same reason any other thing smells. Tiny particles on the corndog are constantly being released into the air. Heating a corndog will accelerate the process and may cause a stronger smell.
