Flights leave at night for two reasons: this gives the chance for passengers to sleep during the flight without disrupting the normal sleep pattern, and this gives the passengers an opportunity to arrive at their destination early and waste an otherwise useless time spent sleeping to travel.

I assume you are referring to flights from North America.

This is also to do with the fact that most large airports in Europe have curfews, banning flights landing or taking off at night. This is a noise prevention measure. Typical curfews run from 23:00 to 06:00, but the exact times vary between airports. Taking off from North America at Midday would probably mean you would land during the curfew.
