Cervantes chose to write in Spanish because that was the language his readers knew. Shakespeare wrote in English because that was the language his audiences understood. Italian writers wrote and still write in Italian because that is what language their readers read.

The whole world recognizes Shakespeare as the greatest writer in English, and the greatest playwright in any language. There may be a debate whether Shakespeare is the finest writer of anything, when he is in competition with Goethe and Dante and Cervantes and people like that.

Two writers who influenced Charles Dickens growing up were William Shakespeare and Miguel de Cervantes. Dickens admired Shakespeare's poetic language and storytelling, while also being inspired by Cervantes' satirical and comedic style in "Don Quixote."

Metaphor
At least one of Shakespeare's plays which is now lost was called Cardenio (based on Cervantes' Don Quixote). Another is a sequel to Love's Labour's Lost called Love's Labour's Won.Shakespeare certainly wrote a play called Cardenio, which took its story from Cervantes' Don Quixote, which was a new book at that time. However, no copy of Cardenio exists, so it is lost.
Probably because it was Cervantes's own time, since he and Shakespeare were contemporaries, dying on the same date (although not on the same day). But the satire in Don Quixote, at any rate, is not directed at the middle ages as such, but rather at the romanticised version of it found in the kind of literature Don Quixote loved to read.
