The soil is very good for crops. The Italian volcanoes are located in areas that are on the Mediterranean coast and the weather is mild, the land fertile for growing lemons, grapes, Oranges, and other crops. A large amount of sea salt comes from this area too. Tourism is very high because of the mild weather and beaches. While visiting the area( I have been there) you don't think that the very active volcanos will explode. Same with the millions of people who live there.
