When you're working (under stress) the time seems to fly by causing you to miss/skip meal times because of your busy schedule. As this goes on you may start to lose weight and your body gets used to eating less so therefor you're rarely ever hungry. For business people, it is also hard to fit it in to their busy schedules.
Depending on different types of stress, the causes can be different. Like being under stress because you are very self conscious. If this stress gets worse causing you to hate your body, your mind starts to turn itself against food so whenever you eat anything you feel "fat" or "ugly". This stress causes your brain to believe what you're telling yourself, leading to an eating disorder or other disorders.
But these are the long term effects of Stress. The main reason people under eat, under stress would most probably be because they have their minds on the other things (causing the stress) and completely forget about food.

Some people crave more food than they need and so they have to fight this craving in order to avoid gaining weight. Under stress, such people may give up this fight.
It really depends on how the person handles the stress. Some people actually function well on stress. I'm sure you know someone who works well under pressure, well this is the same principle. However, some people let stress consume their lives. These are the people that suffer the consequences of stress.
