They are divided in different categories such as (E100-E199) colorants, (E200-E299) preservatives and (E400-E499) thickeners/stabilizers and emulsifiers. So there is not 1 use that 'e-numbers are for'. You can find a list of the e-numbers on wikipedia and compare it with the e-numbers on a food package. Some people are afraid of E-numbers, but the truth is that there are some really innocent things on that list like vitamins, gelatin, oxygen, chlorophyl and caramel (and some debated things also like aspartame and monosodium glutamate of course.)
