Popcorn pops because of small amounts of water in each kernel. As it is heated the water becomes steam causing it to pop. They don't all pop at the same time because it takes longer for steam to build up in some compared to others. Some may pop very fast while others go slower.
Water expands when frozen, so it pressurizes the kernels. This makes them easier to 'pop' when the water boils and tries to escape all at once.

No. The bags come in different sizes. Also, even if they are the same sizes, there is a reason why some bags can stay in the microwave and pop longer(because they have more kernels) and some are done in under a minute (because they have less kernels.)
There is a naturally occuring variety of pink popcorn kernals (called "strawberry popcorn", due to the colour as opposed to the taste). However I do not know if the kernals remain pink when popped. I have not heard of other naturally occuring colours of popcorn, but I expect you could just throw some food colouring onto regular popcorn and get a decent result.
