When you reheat do it in the oven or stove top. reheating potatoes in the microwave typically does not keep them hot enough for long enough to kill the bacteria.The good news is majority of the "food poisoning" you would get from typical potato bacterias would only last 12-24 hours...
Put the mini white potatoes in a large container, put cold water to cover, boil for 6 minutes only, transfer immediately into ice cold water to stop further cooking.Leave them in water for 15 minutes and then do whatever you may do with them. if you boil for too long , they will come out too soft and mushy and you do not want that.
Yes, so long as they are refrigerated in between. Sometimes part boiled potatoes go grey when they are kept for too long; you may want to put a little lemon juice on them to prevent this. Refrigerating also helps:)
