Yes, a Muslim can be vegetarian if he wants so for any reason. However, it is not preferred to refrain yourself from eating something allowed to you unless have strong reasons as health problems or difficulty to get other halal food or halal slaughtered meat.
It is for the free choice of the Muslim, for health reasons, to be vegetarian or not. However, it is not a religion requirement for Muslims to be vegetarian.
Yes, Muslims can be vegitarian. Muslims are allowed to eat Halaal foods, but are not specifically forced to eat meat if they don't want. As long as whatever they eat is halaal.

In principle, if a Muslim selects to be vegetarian then it is his/her own right. However, this should be for any reason not relevant to religious reasons.

People become vegetarians for a number of reasons: they may think it is more healthful; they may feel empathy for animals; the may view it as leaving a lighter "carbon footprint" on an overburdened ecosystem. These are individual choices: Islam per se does not endorse vegetarianism. In fact, one of the delights of Muslim heaven is an unlimited supply of "roast fowl."

Also, non-meat products are almost in an automatic state of halal-ness. (There are some exceptions where dairy and alcohol are concerned, but it generally holds.) As a result, a Muslim who lives in a place where halal food is rare may resort to being vegetarian to avoid the problem of making sure that their food is certified halal.
