The fruits and vegetables are being sprayed with water because basically they will dry out if water is not sprayed.

The fruit and vegetable cells inside are hypertonic as the water concentration inside is greater than outside. Therefore, natural osmosis (passive transport) will occur because the molecules are always in constant motion.

When fruits and vegetables dry out, they do not taste the same nor do they look the same which is why markets spray water.
