Metal is a good heat conductor, the heat from the tea conducts up the spoon. The ceramic cup may not be as quick to transfer heat as the ceramic may be not be as good as a conductor.

A metal spoon in a cup of tea will act as a radiator, conducting heat to the air. If you stir it as well, you are bringing the hotter liquid from the centre of the cup to the edges, where it can cool faster.
But experiments have shown that stirring a cuppa continuously for 10 minutes will only drop the temperature by 2°C, compared with just leaving it to stand. The fastest way to cool your tea down is to add a bit more milk, or a splash of cold water.

Hot tea is capable of dissolving more sugar than iced tea.
Well, in a cup of 200mL of tea one teaspoon will indeed dissolve. In fact up to 32 teaspoons of sugar will dissolve in a cup of hot tea (200mL). Not that you want that much sugar...Not sure if coffee is the exact same with sugar amounts.
There are 16 tablespoons per cup, and 3 teaspoons per tablespoon. That makes 48 teaspoons per cup, and a quarter cup would be 12 teaspoons. Although the spoons from the silverware drawer are called soup spoons and tea spoons, a tea spoon is rarely 1 tsp in volume. You'll need to use a measuring spoon to measure out teaspoons and get it right.
