Well, all foods do not have the same calorie content; 450 grams of cucumber will contain far fewer calories than 450 grams of butter will. Cucumber is mostly water, which is calorie free. (And to be fair, you may gain 450 grams if you ate 450 grams of butter). All foods are not equal :P

Your body uses a lot of energy each day just breathing, walking, taking and making new cells (around 1800 kcalories if you're small you do nothing else all day)- so you body requires quite a lot of energy just to do what it keeps doing. So it utilizes a lot of what you eat, so it does not turn into fat. Anything eaten on top of your daily calorie requirement will usually be stored as fat, but most people don't overeat everyday of their lives (some days they undereat), so weight is not continually gained.
