You would reverse rotation on a 3 phase motor to get it to run backwards. Say I fill up a tank truck from a lake. I turn on my generator. I run the motor in one direction. Then I drive the tank truck and the motor to a different location. Then I turn on my generator. I attach the hose to the motor on tank truck. I throw the switch to make the motor run backwards. I aim the hose at the fire in your house. Aren't you glad that I can make my 3 phase motor run backwards?
Three phase motor are given a three phase supply using R, Y & B phases.
So if you connect the phase sequence in reverse direction then the motor rotates in reverse direction. (i.e. connecting R B Y instead of R Y B)

It is very simple. Just interchange any two phase wires. i.e. Y and B ( or ) R and B ( or ) R and Y for example Stop the supply. keep R phase wire as it is and disconnect B phase wire and Y phase wire. Connect B phase wire to the Y phase motor stud and Y phase wire to the B phase motor stud. Now give the supply, now motor revolves in opposite direction to the earlier.
