Why does Mexico put food out for dead people if they can't eat on the day of the dead?

Supposedly on that specific date the spirits of the dead return from the beyond and remember the taste of food and drink that is displayed on it. Quoting the voice over on the Devil's Backbone (2001) by Mexican director Guillermo del Toro:
