Supposedly on that specific date the spirits of the dead return from the beyond and remember the taste of food and drink that is displayed on it. Quoting the voice over on the Devil's Backbone (2001) by Mexican director Guillermo del Toro:

the day of the dead is a holiday that is celebrated in Mexico this day is similar to Halloween on this day, people would offer gifts and food for deceased relatives that were said to rise that night. people would also dress like spirits to "blend in". cool isn't it?
