The C stands for Celsius, the metric equivalent of Fahrenheit, which is the temperature scale used in the US. In my 2001 Blazer, the compass/temp display is part of the overhead. Next to the display, there are two push-buttons. One turns the display on and off, and the other toggles between Celsius and Fahrenheit. Just hit that button and it should go away.
