A dog will roll over for several reasons. It is an extension of submission behavior. When canines show submission, they typically will roll onto their side or back and show their throat. rolling over is just a continuation of the movements of the behavior. People often train their dogs to roll over.

They roll on their belly to show that they are subordinate. When a dominant dog walks by, the subordinate dog will roll over to show that they don't want to fight, or that they are not going to challenge the dominant dog.

I'll tell you what I did, it could not work for you but I just said "roll over" in a pippy way and made circular motions with my fingers and you want to make sure your dog knows how to 'lay down' then once your dog knows that just kind of roll him over like you'd see any dog roll over on its own but don't push hard and wildly, you don't want to hurt him/her!
