Hokey pokey (honeycomb) contains honey in the recipe, which is mildly acidic. Some recipes also have some vinegar or lemon juice in, to enhance the acidity. Baking soda is alkali. Mixing the acid and alkali creates a neutralisation reaction, releasing CO2 and causing the aeration in the honeycomb.
