By stale sweat I'm assuming you mean sweat that has dried? First off, there are lots of electrolytes that you lose through your sweat. Secondly, bacteria like to grow in moist areas and sweat is very moist as you well know. When bacteria get in the sweat, they use it as a food because you have all these nutrients you lose and when they use the sweat as food, they release a gas and this is what gives it that smell. The smell will stay even after it is dry because it has not been washed away.
I actually believe that humans have pheromones, which all smell differently because of DNA, and when two DNA strains are opposite in a male and a female, each others sweat will actually smell good to one another, showing that they are biologically meant for one another. But this can occur with many different women or men. So just because he or she smells good doesn't mean she is the "one".
Sweat actually doesnt have a smell. Your "pits" are a perfect ground for bacteria. Warm and damp. The smell of "B.O" is actually those bacteria reproducing and (this sounds, and is, very disgusting) deficating. The longer you go without washing up, the more powerful the stink gets.
