This simply because it get bruised. Bruising destroy cells and when cells are destroyed the mold will move in much more easily.
A fresh apple is protected to a certain extent as long as it is not bruised. It can even dry up totally if moisture levels are right and it is not damaged in any way.
As soon as you damage an apple you make a point of entry for bacteria and mold.

I actually did an expirament on this topic. Red apples rot faster then green apples. This is due to the acidity in the green apple that keeps the green apple fresher. If you cut a green apple and a red apple in half, you will find that the red apple will start to brown slightly before the green apple.
