Your AC draws power from the engine. If too much power is drawn, and the engine does not compensate for it, RPMs can go low enough to cause it to stall.
The first thing to do is have your ac compressor checked to make sure it is working properly (a bearing could be damaged).
Next thing to do is clean your throttle body, this is an easy job and has fixed the problem you describe for many people.
I think there may be a way to adjust the ac idle speed as well but I've never done it, and this is probably the last thing you'd want to try anyway.
