First you should know that nitrous oxide (a.k.a NOS) is quite stable at room temperature.
However, in your engine, where the temperature is very high, NOS breaks down to its elements. Namely oxygen and nitrogen. Since additional oxygen is now available, more fuel can now be burnt in the engine thus providing more power and hence greater speed.
