There are different ways of cooking meats, especially steaks. Though rare styles of cooking are safe to eat, the insides of the cut of meat remain moist and a little pink or bloody. Therefore, in some cases it is not "thoroughly cooked", but most reataurants attempt to assure customer safety.

The reason for the color and taste of trout meat is akin to the color of flamingos. Both create that pink color as a result of what they have eaten. It's a direct result of their body's process of breaking down a calcium enhanced diet that has many invertebrates. The remnant compound responsible for that sweet pink flesh of the trout and the famous pink of the flamingos is Astaxanthin.

Well, it depends on how you like it.

If you like it medium rare, then it should be at least a little bit of red

If you like it rare, then it should be pink

If you like it raw, then it shouldnt be cooked at all!

The reason smoked meat is still Pink is it is not cooked(this only happens when the product is cold smoked)
