As the engine speed increase so does the speed of the oil pump.
the faster the pump turns the higher the pressure becomes.
When changing gear the engine speed drops along with the oil pressure.
A pressure gauge indicates actual pressure and a differential pressure gauge indicates the difference in pressure.
THE NORMAL GAUGE PRESSURE SHOULD STAY AROUND 12 TO 19 P.S.I
Check with manual gauge - if pressure normal - could be defevtive oil pressure sensor or gauge

Oil level and oil pressure are different. You don't need to have full oil to get normal pressure.
It is normal for the pressure to drop. It depends what you mean by "very low". Check the oil level and the condition of the oil and filter. The oil and filter may need changing.

Try changing the fuel filter. If that doesnt work put the fuel rail on a pressure gauge. If there is too much pressure then your fuel regulator is not working properly or your return lines to the tank are fouled up somewhere. If the pressure is too low then the fuel pump is getting ready to go. You can get a fuel pressure gauge at Harbor Freight for less then ten buck. Then check the plugs, air filter, etc just to rule it out. Its somewhere to start anyway.
That light notifies you that one of the gauges is out of its normal parameter. Check the temp (overheating), the voltage (not charging) and the oil pressure gauge (low or no oil pressure).
Oil pressure has to built up. As long as the pressure is normal and the oil level is good. There is no problem.
according to my pressure gauge on a 99 gst at idle about 50 and 3200 about 75psi
