it is punched down because whenmaking bread you wnat it to be warm, flaky and soft. punching the dough meks the air bubbles leave so there are no pockets and the dough will come out soft and chewy not so coarse in texture.

There is no actual NEED to punch it, it just feels good to do so! What must be done after the first rising is to knock all the air out of the dough before you shape it for the final loaf. If you do not do this then the final bread may have big air pockets in it, giving it a good punch is a good way to start to get the air out.
