Running the A/C puts added stress on the engine. It is likely that either the cooling system is in poor shape and just barely adequate to cool the engine, and with the added load of the A/C it isn't up to the task of keeping the car cool. Or the cooling fan isn't coming on to help give added airflow to compensate for the added load of the A/C.
It is either on the compressor, the smaller ac line, or the accumulator.
