I can think of three possible reasons:

First, an ignition coil can stop working when it gets warm. Check the quality of the spark at the plugs next time it happens.

Second, the catalytic converter can stop allowing the passage of air when it gets warm. Thereby not allowing any air into or out of the engine. I've had cars actually stop running going down the highway for this reason.

Third, if you vehicle has EFI, check the air cleaner entrance. With earlier trucks this is behind / left side of the grill. If the rain/foreign object filter is missing then the problem could be your air filter has gotten wet. Without this filter water can easily pass into the air filter. Once the paper filter dries it is generally ruined. It doesn't pass enough air once the choke opens; once the truck warms up it quits due to lack of air. Replace the air filter and place a piece of window/door screen over the opening until you can get the proper filter.
