Some men have feelings that they are embarassed to display. So when he looks at you sleeping, and feels pride that you are in his bed, he says it then, when he feels safe in doing so.
Please know this - if he said it when he thought you couldn't hear it, he couldn't then be hoping to gain anything by it. So he obviously really loves you.
