The Mail application will open if it has been set to open when you login. To reset this click and hold on the Mail icon in the Dock and a menu will pop up. Untick the option Open at Log In/Star Up.
Open Mac Mail. Click Mail > Preferences > Accounts. Click the + sign on the bottom left of the screen. Follow the instructions to add you email account to Mac Mail. It is simple and easy. Once you put in your email address and password your Mac will pretty much do the rest.

Click the + sing bottom left to create an account.
Mac Mail or just Mail as Apple refers to it comes preinstalled on all Apple Computers.
You can't open Mac on Android.

An alternative is to set up the message at the server end (many email providers supply a web interface for performing such tasks) then you can turn the Mac off while away and retrieve your mail when you return.
