I feel sure you have checked to see that the engine has oil in it. You need to install an external oil pressure gauge, the mechanical type and check for pressure. If it shows that you have oil pressure then your sending unit is defective.

Did you check the fuel pressure? You may be running out of fuel. There is enough pressure in the fuel line when you have the key on, and the pump is pumping but as you use up the fuel in the line the fuel pump can't keep up and you lose pressure and the fuel shuts off. Get a fuel pressure gauge and hook it inline on the fuel rail and see what pressure you have with just the key on, and then start and run the engine and watch the gauge. If the gauge drops, your fuel pump is likely on it's way out.

I have a 1994 Mercury Cougar that runs good but burns alot of fuel and after the engine starts the and gets some heat, oil pressure gauge indicates low when there is nothing wrong. Not really a good sign. Have the oil pressure checked with a mechanical gauge at the engine when cold. If good, then have your sensor replaced.
