Either your gears are not locking at the start or you are in park or neutral or emergency brake on.

So you can't max it out and blow up the engine.
Turn the throttle, revs go up. Let to, revs go down.
Gear changes are determined after how fast the engine is turning. For each gear there are set limits for which engine revs that are allowed. if the revs go high, the transmission changes up a gear, if the gears go low it drops down a gear.
my 03 CR runs out of revs at about 170 km/h, think that's about 105 mp/h
Your transmission may be low on transmission fluid.
check your transmission fluid with the vehicle running in park. the level should be in between the dots or in the crosshatches. it also should be red ,not brown or black.
It is time for a professional car mechanic to have a look. The steering may be caused by dry joints (needs greasing), the revs may need the engine to be adjusted to run slower.
