Jewish involvement in slavery was typically as followers as opposed to leaders. Jews did not pioneer any new slave-making or slave-transporting mechanisms. This is not to say that Jews were not involved in slavery; in the US Civil War, as many Jews enlisted to defend the Confederacy as fought in the Union forces (roughly 10,000 on each). Jews in the US South defended African-American slavery using the same Hamitic references made by Christian Southerners such as Calhoun.
However, when it comes to schools, there is typically only enough time to teach history in broad strokes. Since the Jews were a minority of slaveholders and slave-supporters, they are not mentioned. It's the same way that Jews who fought in the American Revolution are not mentioned. Jews are often not mentioned except when they have a strongly above-average contribution in a particular issue or event.
