Why don't apples go brown when boiled?

The browning of the apple is due to the oxidation of the surface of the apple when it hits the air. When you've boiled the apple, the surface is now cooked so it no longer responds with oxidation.

Which apple goes brown the quickest?
I did an experiment with 4 different types of apples. They were Royal Gala, Red Delicious, Pink Lady and Granny Smith apples. If you cut the apples into quarters the Royal Gala apple goes brown in 2 hours and 5 minutes, the Red Delicious apples go brown in 4 hours and 20 minutes and the Pink Lady apples go brown in 6 hours and 29 minutes. Granny Simth takes 6 and a half hours.

Will lemon juice stop fruit decay?
Well if you put it on your apples it will make your apples not go brown...you know how if you let your apples sit for a long time once you have taken a bite? Well, then the lemon juice makes it not get that brown stuff...and if you are making apple pie and cut up the apples then put a little lemon juice to make it not be brown.

What makes apples go brown?
Apples turn brown because of Acid Oxidation. When the acids of the fruit are exposed to oxygen for a prolonged period of time, the fruit begins to "break down" or decompose the acids. When this happens the oxidation of the acids begin releasing a Byproduct which is what turns your apples brown. A simple way to prevent apples from turning brown is to coat them with lemon, lime, or sugar. This will not stop them from turning brown but delay the process enough so they don't look nasty.
