They shouldn't. When using the correct electrode and amperage they will get hot but not red hot. Uncoated electrodes do get red hot but are not used in most applications. Too much amperage is usually the problem.
No machining is advisable when material to be machined is red hot rather it can be forged, extruded. Primary machining only is normally advisable when material is red hot.

welding cast iron is not reccomended although it can be done,myself i have always had the best luck by preheating the cast iron to almost cherry red then using a low hydrogen electrode such as 7018 which is fairly common,there is also an electrode known as inconel which contains the alloy nickel,but its hard to find and very expensive
