First of all, because the President has great powers that are Constitutionally linked to his office alone and that he cannot delegate to someone else even if he wished.

Beside that, no President wants to be eclipsed by his vice-president or wants to be perceived as seemingly not up to the job, which would be exploited immediately by the other Party and which might well cost him his re-election.

The vice President does assist the President, it is not necessary to officially change the title to assistant President.
