It's not so much the North Star (Polaris) that has changed; stars do change, but usually not very quickly.What has changed is the direction of Earth's axis of rotation in space. It currently points almost exactly towards Polaris, but this will change over time.

The earth spins (this makes night and day), the axis of spin (a line between the north and south poles) is tipped over as compared to the plane in which the Earth orbits the Sun each year. This means that for 1/2 the year the northern half of Earth is tipped slightly towards the sun (it is warmer in the north) and for the other 1.2 of the year the northern half of Earth is tipped away form the Sun (it is cooler in the north).
