Why having a lot of applications and documents open would eventually slow down the performance of the computer?

Applications and "open documents" all consume memory (RAM), which is finite. When the system runs low on RAM, it can use paging (subject to the operating system and settings). Paging means to emulate larger than physical RAM with the help of a hard disk. Accessing this hard disk and the "paged memory" slows down the computer.
Apart from RAM consumption, each running application (and within each application, each process, thread or fiber (with varying terminology subject to the operating system)) consumes CPU cycles. Even if the application does nothing, the application or a related operating system services needs to check and confirm that it needs no do nothing (or take action if a keystroke, a relevant mouse movement or any other event occurs).

RAM is used by the programs and application open in the computer.For example You have 1GB of ram in your system and you run 3 programs say 1,2,3 and they require 200mb,300mb,600 mb of ram respectively.
these program covers 1100 mb on your ram and 100mb is free.so whe you will run a program of requirement of ram of 80mb then it will leave less space for other system processes hence your system slow down and many times hang.
