Why if you want to delay your period do you have to run two packets of monophasic pills together. Why not just take an extra week of active pills?

No reason; you can take two packs back to back, or you could just extend your active pill-taking by one week. Either way is fine, poses no special dangers, and does not increase your risk of pregnancy. Just remember that you must not go more than seven days without an active pill, and that you may have unscheduled bleeding or spotting as a result.
