Either the oil is low, as you brake the remaining oil sloshes forward in the sump away from the pickup and the oil pump can only pickup air so the pressure in the oil gallery drops and the oil pressure light to comes on.
or
The wire to the oil pressure switch is off or bare and as you brake it moves forward and touches some metal causing the light to come on.
