Why is a 2001 Impala 3.4 just as hard on gas as a 1994 Chevy Blazer 4x4 4.3L?

No way it should be. I can run 80 all day and get 31 mpg, same year, same engine. Could be a lot of things. I don't know if it needs a tune up, tire pressures, maintenance done. If it seems to run well and has less than 100k so that it doesn't need plugs, I'd try this. Check the air filter. Simplest and cheapest and often overlooked. If you do replace it, or plugs or any changes like that, disconnect the negative battery terminal for say 15 minutes. This will reset the computer to quickly make changes for what you changed. Give it a couple days to square away. You will lose your radio presets. You could add some fuel injector cleaner to your gas tank. You didn't mention any check engine lights. It could be so many things with all the transducers, sensors, vacuum lines, bad spark plug (should mis but the HEI will fire almost dead plugs), etc. If nothing simple helps, I'd take it to a diagnostic center.
