I know a few:
- they don't need breaks therefore dont stop the work.
- they have much more accurate changes, can read even the most minimal of changes.
- can take data readings more frequently (thousand times per second) if necessary.
- data logging can operate in different environments E.g the arctic on top of mountains.
- people have time to do more things rather than just looking at a thermometer.
- since data is already on comp it can be analyzed to draw graphs.
