Knives are see as a small version of swords; crossed swords is a sign for war, conflict, danger etc. hence crossed knives are seen as unfortuitous.
Also during the 17th and most of the 18th century and earlier sword dueling took the lives of many male family members throughout Europe until outlawed. At the beginning of every duel the protagonists crossed the tips of their swords and then began the duel to injury or death. Thus in Europe it became a sign of bad luck and possible death of a family member to leave knives crossed and every time they were found crossed to uncross them to relieve this potential bad luck.
