Grains are a good source of carbohydrates, but not all grains are equally nutritious. For example, brown and black rice will have more dietary fiber, phosphorus, manganese and B vitamins than white rice. And choose whole grains over processed white breads and pastas when possible. Some of my favorite whole grain options are slow-cooking rolled oats, steel-cut oats, brown rice and quinoa, because these grains have carbohydrates that break down slowly into the bloodstream. Eating low-GI (glycemic index) carbohydrates are beneficial for sustaining energy throughout the day.

They have fiber, protein, essential fatty acids, vitamins and minerals; that refining removes from them.
