Kat is important to Paul and the other soldiers for both practical and symbolic reasons.
Practically, he plays a large role in keeping them alive. He is able to teach the newer recruits much of the first-hand knowledge that they could never learn from infinite amounts of prior training could never -- how to listen for the whistles of different projectiles, that gas settles at the bottoms of trenches, etc. Additionally, Paul points out his uncanny ability to find food wherever they go.
Symbolically, Kat is the first truly good and honest teacher the boys have had. Both Kantorek and Himmelstoss maintained strong authoritarian positions and symbolized the sort of blind nationalism that was running rampant throughout the homefront. Kat, though a figure that Paul looks up to for guidance, is technically on his level, and helps the boys to confront the cruel realities of war. He's an old hand; he's the embodiment of one of two options for Paul's future. Paul can live and become an experienced soldier helping the younger recruits (as we see him begin to do as the novel progresses), or he can take the opposite road and die young and helpless like Kemmerich. Either way, his future is entrenched (no pun intended) in the war.
Kat is important to Paul and the others in "All Quiet on the Western Front" because he is an experienced and resourceful soldier who takes care of them, provides them with food and supplies, and offers emotional support in the harsh conditions of war. His practical skills, wisdom, and camaraderie help the group navigate through the challenges they face on the front lines.
