Milk is refrigerated to delay spoilage. Milk contains bacteria and the bacteria will continue to grow, even under refrigeration. It spoils much faster at warmer temperatures.

At a sufficiently lower temperature, the reproduction of bacteria that cause souring (fermentation) is considerably reduced. Milk will still go bad eventually, unless frozen or dried.
