Without Adam and Eve eating from the fruit, there wouldn't be any sin in our world. They caused a dramatic change in everything from that point on forward. Plus, if you think about it, they're the first people to have kids, so they're like our great, great, great etc.. grandparents!

Far better to believe in the story of the creation of Adam, against all evidence, than to have your faith begin to unravel.

Luke's Gospel says that Joseph was descended from Adam, so if there was no real Adam, the entire genealogy was fabricated. The epistles also mention Adam.

If there was no Adam and no Tree of the Knowledge of Good and Evil, then there can be no 'fall' and therefore no original sin that required the crucifixion of Jesus for its forgiveness.
