The heat effect on bread is that the heat causes the yeast to rise i believe. yeast also eats sugar and such. The yeast doesn't eat the heat, it just causes it to become active and start to move. Also it causes the dough to become bread and to form a crust and a crunchey outer layer!

A very low temperature so the oven feels barely warm. But here is a better way that works whether your dough is in a bowl for a first rising or in loaf tins for a second rising.

Boil the kettle. Get a large roasting pan and place another smaller dish or pan upside down inside it. Stand your bowl or tins of dough on the smaller dish as if they were on an island. Pour boiling water into the large roasting dish till it nearly overlaps the top of the smaller dish - like a moat. Drape 2 clean teatowels at right angles over the bread bowl, or tins so that they hang down to the counter-top enclosing the bread in a warm steamy atmosphere. The bread will have risen in between 30 and 45 minutes and it will be a lot cheaper than heating the oven for that time.

Yeast needs water to be a little warmer than lukewarm to activate. Too hot will kill the yeast and too cold will cause the yeast not to rise. Rather than use a thermometer, experience will best teach you what temperatures work the best. When you mix the yeast into the warm water, it will foam on top just a bit. Give it a few minutes to activate before using it. You should be able to smell the yeasty smell if your water is the correct temperature and the yeast activates as it should. On this note, you can store your yeast in the freezer and it will keep up to six months.

The water must be warm enough to get the yeast out of its dormant state so it can start multiplying and rising, but not so hot as to kill it before the bread is ready for baking.
