Sushi was invented thousands of years ago in Japan as a way to preserve raw, cleaned fish. It was pressed between rice and salt by a heavy stone for a few weeks, then covered with a lighter material until the fish fermented.

In the 18th century, a chef named Yohei Hanaya decided to skip the fermentation process and serve it on its own. Fresh sushi later became very popular.

Not all sushi has raw fish in it, like the California roll or the eel roll.

I personally LOVE sushi, with raw fish or not. It's what makes each roll unique. If you haven't already tried it, don't be scared!
