Salt acts as an antifreeze, reducing the melting/freezing point of the ice. This makes the salt & ice freezing mixture much colder than that of ordinary ice, causing the ice cream to freeze faster and with smaller crystals. An ice cream with smaller crystals feels smoother and creamier in the mouth.

I use a compressor ice cream maker, which requires no salt & ice mixture as it has a built in electric powered freezer.

it is added so when the ice melts it freezes the ice cream 4 you"Actually, when salt gets cold a reaction intensifies the temperature of the ice, making it freeze faster than if you used just ice alone. "

No. The above quote is incorrect. It's a matter of freezing point depression. Salt, a solute, lowers the freezing point of an ice-salt water mixture. See colligative properties in a freshman college chemistry text.

Salt has the effect of making the ice colder. Therefore, the ice cream becomes colder too.

Salt is added to ice to lower the temperature of the ice/water mixture. Without the salt, the temperature would not fall below 0 degrees Celsius, which is needed to make ice cream. The freezing point of salt water is below that temperature and thus allows the cream to partially freeze, a necessary part of making ice cream.

Because what is in ice cream? mainly Sugar and many other compounds. right? when substance like sugar is in a solution before making it into a icecream, the freezing point depresses. Which means the freezing point of the ice cream lowers and what salt does is it lowers ice's temperature.

I actually tried this and figured out that when I put ice with salt, the temperature of ice went down to -10 degrees celcius approximately.

to make it even simpler, if you don't have salt and try to freeze the ice cream at normal freezing point, your ice cream won't freeze

Salt is added to ice because it makes the ice melt faster, and melting ice absorbs more heat (from the ice cream batter) than non-melting ice does. The faster the ice absorbs heat, the faster your ice cream gets done.

Can salt have an effect on the taste of ice cream?

Well, it does make it salty. In all seriousness though, if you add rock salt while making home made ice cream, it doesn't affect the flavor, but it makes it colder.

One place to look to find an ice cream freezer is a department or home goods store that carries appliances. Bed Bath and Beyond is a good store to check. They can also be found on Amazon.

Why is salt added to ice cream when your making homemade ice cream in an ice cream in a ice cream freezer?

You add salt to ice to lower the temperature of the ice/water mixture. Without the salt, the temperature would not fall below 32F, which is not cold enough to make ice cream. The freezing point of salt water is below that temperature and thus allows the cream to partially freeze, a necessary part of making ice cream Salt causes water to freeze at a much lower temperature. Adding salt to the ice causes the temperature of the brine solution to drop dramatically, while freezing the ice cream inside the container. As the ice melts, the "heat" of the ice mass is preserved by lowering the temperature. (It's called "latent heat") It takes approximately 80 calories of energy to melt a gram of ice. That latent heat principle is used to lower the temperature of melting ice, thereby allowing the ice cream to freeze. It's an example of simple physics and is described in most physics books and physics classes.

How do you ice cream?

The easiest way, by far, is to purchase (or borrow) an electric ice cream maker. But, if you don't have one, you can get a big tub and fill it with ice and salt (the salt will make the ice colder). In the center, place a metal dish, with your ice cream ingredients. Stir the ice cream ingredients, and stir, and stir, and stir, stirring constantly, until it is frozen. You could do it in the freezer, but you'll probably end up with more ice crystals, because you won't be constantly stirring it. Home-made ice cream is the best!

Can ethanol freeze when you put it in the freezer?

Not in a domestic (home) freezer if it is pure ethanol (a dilute solution can freeze in the freezer). Ethanol's freezing point is -114.1°C. This is far colder than a domestic freezer.

How do you use an antique ice cream maker?

You put your ice cream mixture in the container and close it and put it in the old fashion ice cream maker and layer Ice and rock salt on the outside, if you have the hand crank type then you crank it for a long time. If you have an electric one you turn it until you hear the motor start to "work heavier" That means you have soft ice cream. Edit: Antique ice cream makers won't be electric.
