No, hot water heaters don't typically have a smell. If you are smelling fumes, you could have a leak in your gas line.
Tankless. A tankless heater heats the water as you use it. It doesn't store hot water and keep it hot day and night whether any is used or not. The water is heated almost instantaneously, and the heater will keep the hot water flowing as long as the water is turned on.
"How much" as a question is quite vague. Some hot water heaters are comprised of copper only. So this now depends on the size of the hot water heater. Some hot water heaters have no copper whatsoever.
Soot, or smoke, is composed of particulates--tiny pieces of a solid--suspended in gas, or air. It is solid, but acts like a gas. The particulates come from whatever fuel is being burned and are carried by the hot air produced by a fire.
Gas heater & electric heater both are available.

At current gas prices they cost less to use and a gas heater gives you a much greater supply of hot water on demand.
It depends on if it's a gas water heater or electric. I don't think electric makes any noise, but a gas water heater, you'll the gas ignite, and hear the rushing gas from the burner.
