It's basically survival instinct, since most predators need good light to see their prey. If the potential prey is asleep during the day, predators won't find them. Additionally, temperatures are much cooler at night, so animals will be more comfortable feeding.

Why do animals and insects in the desert gather food at dawn and at night?

Most desert dwelling animals are crepuscular, that is, they are active during dusk or dawn. The desert temperatures vary in extremes during the day and night. During the day, the desert is hot and most animals seek a cool sheltered place to rest or sleep. Conversely, at night, the desert can be quite cool, deterring animal activity. For this reason, many desert animals come out just as the sun sets, when the temperatures are cool enough so they do not overheat or dehydrate, but return to their place of shelter at night to stay warm when the temperature drops.
